Here is a list of plants you can use in your stir fries. Stir fries is a term I use loosely – you could also use them in curries, risottos, steamed veges, omelettes etc.
Try not to overcook them as they’ll lose a lot of their nutrition and taste – just a couple of minutes at the end of cooking normally does the trick. Of course chillies, ginger and turmeric would be the exceptions – they should be added early to flavour the whole dish.
Basically you can use any combination of these greens when a recipe calls for spinach or asian greens. I like to harvest a bunch of different ones. When you’ve got a big patch of greens in your backyard you can afford to use heaps!
